Things are a little crazy in the land of Bradford. On top of that it’s been super hot–until yesterday…thank heavens! We’re talking several days of temps over 100. And thats not normal for end of June, first of July. That’s usually end of July, first of August weather. So we’ve been looking for some great recipes that don’t involve a whole heck-uv-a-lotta cooking or using the oven.
Here’s what we’ve added to our list of faves here in our neck of the woods:
One Pan Balsamic Chicken and Veggies

She suggests using asparagus or beans and we put in both for those that like one or the other. I like the fresh beans and the girls–who never eat asparagus–preferred that over the beans.

This was a huge hit for Dan, Zach and I on Sunday. (The girls were in California.) The men folk especially loved the potatoes and Zach even loved them cold from the fridge the next day. It’s kind of ‘pot-pie’ like. Simple and delicious…and crocked!
Cold Peanut Noodles…aka, Thai Noodles

I like the sound of Thai Noodles instead of Cold Peanut Noodles. ;) We just tried this last night and it was really good. Jordan said she wanted something cold, so I looked up ‘cold food for dinner’ and it came up with this. I’m so glad too. Definitely worth keeping on file.
Don’t you just love the modern age for looking for recipes? You can say, ‘What’s for dinner?’, do a quick search or look through your Pinterest grouping and bam….that’s for dinner.
