Last night we had a wonderful night with ladies in our women’s church group. The theme was ‘Bee Anxiously Engaged’ based on an LDS General Conference talk by M. Russell Ballard (here). The summary of his talk: Great things are brought about and burdens are lightened through the efforts of many hands “anxiously engaged in a good cause.”
My mother-in-law, who is better than an internet search on any subject, came and spoke about bee keeping and the lives of bees. If you’ve never really heard or learned about bees, I highly recommend finding some kind National Geographic or Planet Earth or something! Their world is absolutely fascinating. (Side note: My mother-in-law taught at UVU for many years and also started the Women’s Center there to help women get back on their feet. She’s a go-getter, this one.)
In keeping with the theme, a few of us made wonderful honey delights…to taste of the fruits of their labors, right? There was Basil Garlic Honey Butter, Nutella Honey Butter, Cinnamon Honey Butter and my contribution Raspberry Honey Butter. All tasted on Kneader’s delicious white bread. All the honeys were wonderful!
I got my recipe from The Lion House (a local ‘top of the building’ type of restaurant). It’s yummy…and simple!
Raspberry Honey Butter
1/2 cup butter, softened
1/4 cup honey
1/4 cup red raspberry preserves
1/4 teaspoon vanilla
Beat butter until soft; add honey and preserves while mixer is running. Add vanilla and beat for 10 minutes. Store, refrigerated, in plastic container.
It’s been a hit in our house so far…after not even 24 hours. :)
We then ended the night with cupcakes from Sweet Tooth Fairy and little bee-themed banner picks that I made using the Minc.
It really was a lovely evening. :)
